    ALCOTEC TURBO FRUIT YEAST
    Turbo fruit yeast is a special yeast variety for fruit ferments, ideal for the production of wine, brandy, especially plum brandy. These yeasts are highly tolerant to alcohol (even up to 18% to 20%), the aim of which is to enhance the aroma of the fruit used for fermentation.
    They contain an enzyme for the decomposition of fruit:

    These fruit brandy yeasts ferment at 18% vol. alcohol. The package contains 60 grams of yeast intended for slow fermentation with high yield, which enhances the taste and aroma of fruit brandy. One package is enough for 25 liters of fruit ferment.

    Fruit brandy yeasts are also very suitable for ferments based on strawberries, raspberries, blackberries and blueberries.

    Instructions for starting 25 liters of fruit kvass (18% alcohol by volume):
    Mix yeast with 25 liters of fruit kvass with a maximum amount of added sugar of 200 grams per liter of kvass. The optimal fermentation temperature is between 20-28°C. Fermentation time is 4 to 6 days.

    To obtain 18% to 20% alcohol, the fruit must be supplemented with sugar syrup. The amount of sugar to be used is approximately 200-300 g per liter of must (depending on the type of fruit used). Sugar is best added in several doses at intervals of 1-2 days.

    WARNING: Never start 25 liters of kvass in a larger container than 30-32 liters! The yeast may die and the kvass will not ferment!!!

    Always maintain 1/5 of the free space in the fermentation container! If there is more free space in the container for yeast, the yeast will not ferment. If there is less free space, the fermentation container may burst or the yeast may leak out of the container during turbulent fermentation. Follow the temperature specified in the instructions!

    Storage: Store the original packaging in the refrigerator. Store the opened packaging in the refrigerator for a maximum of 3 months.
